Recipes with olive oil and olives

All recipes below with olives and olive oil are traditional recipes from Greece and the Mediterranean.

 

 


Olive Pate

In a bowl place 250g. black olives without the core, 80 g. anchovies- washed and chopped- 50 g. capers, and then mash.

Add the juice of one lemon, a tablespoon of brandy, 200 g. olive oil, salt, pepper and stir well.

Keep the paste in a closed jar in the refrigerator and apply it on bread, preferably lightly toasted.


Fish baked with tomato sauce and olive oil

Wash, add salt and bake or grill 4 to 5 slices of fish - preferably sea bream or grouper.

In a bowl mix two medium ripe chopped tomatoes, a cup of extra virgin olive oil, one tablespoon of chopped parsley, the juice of half a lemon, salt and pepper.

Serve the fish hot, after pouring the tomato sauce and olive oil on it.


Chicken with Olives

Cut the chicken into small portions and put them in a pan, where you have already poured a cup of olive oil.

Cut 2 green peppers, 2 red peppers, 2 onions and 2 cloves of garlic cut into small pieces. Remove the cores from the olives and pour them over the chicken with the remaining ingredients.

Add 2 chopped ripe tomatoes, a large cup of red wine and bake in the oven for about 1.5 hour- until liquids are absorbed.

 


Eggs with Tomato

Put in a pan a couple of large ripe tomatoes, peeled and chopped, salt them and stew for 6-7 minutes, until the liquids are absorbed.

Add six tablespoons of extra virgin olive oil and stir for 2-3 minutes.

Put 4 eggs, sprinkle them with a little pepper and simmer for a few minutes, while pouring the sauce on them every so. If you want, you can add a little grated feta.

Serve with the sauce and the oil.


Yogurt pie with olive oil

In a bowl, beat one cup of olive oil and two cups of sugar.

Successively add 6 egg yolks, zest of one lemon, a yogurt, 3 cups flour (to which you add 3 teaspoons baking powder) and the whites of eggs, which you have already turned into meringue.

Pour the mixture into greased pan No34 and bake in medium temperature.


 

 

Carrot Cake

Ingredients:

3 cups grated carrots
1 cup grated walnuts
1 1/2 cup brown sugar (preferably)
2 cups flour
1/2 cup orange juice
1/2 cup olive oil
2 1/2 tsp baking powder
1/2 tsp cinnamon powdered sugar

 

Instructions:

Beat in the mixer bowl the sugar with the oil until it melts.

Add the orange juice, the walnuts, the carrots, the cinnamon and then the flour and the baking powder (successively) until the mixture becomes fluffy.

Grease a large and narrow pan with oil, sprinkle with flour and pour the mixture.

Bake in preheated oven at 180 degrees for 1 hour.

Wait for the cake to cool and then serve. Finally, sprinkle with powdered sugar .

 

Lentils with sausage and peppers

Ingredients:

1 large onion cut thin slices
1 medium pepper cut in strips
1 large red pepper cut in stripes (best Florina pepper)
2 cloves of garlic chopped (optional)
1 small chili pepper chopped (optional)
1/3 cup olive oil about 400g. sausages cut in slices
2 medium tomatoes cut in big pieces
lentils: 250 gr
salt and pepper: as much as you like
1 teaspoon grated sweet paprika
1/2 teaspoon dried thyme (optional)

Instructions:

1. Put the olive oil in a pot to heat and add the onion, the peppers and the sausage. Stir regularly, at medium- high temperature, for 4-5 minutes.

2. Add the tomatoes and the garlic and continue cooking for two to three minutes at most temperature.

3. Add the lentils and 3 cups of water and when it starts to boil, reduce the temperature and let the food simmer, until the lentils begin to soften. Throughout the cooking, check for water and add more if necessary.

4. Add the salt, the pepper, the paprika and the thyme and continue to cook until the lentils are ready.

5. Serve very hot and if you want you can add a tablespoon of yoghurt on each plate. This recipe is perfect if want to use the tomato salad that was left: after removing the cucumber and the olives, add it at the beginning of the cooking in the pot, along with the sausages and the other vegetables.


Pork with Spinach

Roast 4 servings of pork in olive oil. In a bowl, dissolve a tablespoon of tomato paste in two cups of water and add the minced peel of an orange, salt and pepper.

Pour this mixture over the meat.

Wash a kilo of spinach and a bunch of celery.

When the meat is half-cooked add the vegetables.

The food is ready when it has been left only with the oil.

 

 


 

Banana cookies

For the cookies:

ΣIn a bowl sift the flour, baking powder and salt. Mix roughly with a fork. In the mixer beat olive oil, sugar and molasses at medium to high speed for 2 '.

Mash with a special tool the bananas and add them to the mixture one after another.

Add the vanilla and mix.

Lower the speed of the mixer and add the flour successively, until it becomes dough. Do not overdo.

Cover the dough with membrane and put it in the fridge for 30 minutes.

Take the dough out of the fridge, cut into small pieces and roll into the palm of your hand, like making balls.


For the coating:

In a bowl or dish put the sugar and the cinnamon. Mix roughly. Roll the balls in the coating . Lay greaseproof paper into the baking pan.

Put the balls in the pan with a distance between them and press them lightly in order to obtain a flat shape.

Bake in preheated oven at 180 ° C for 14' - 18 ' , until they reach a dark golden color on their edges.

Wait for them to cool.
